Veggie Tacos

Yum yum yum! These were amazing, hence why I had to share them. This recipe is very simple and you don't have to follow it exactly. Use your imagination and your taste buds my friends!

Some Helpful Hints:

**Always add the garlic to the top layer as it is the first to burn.

**Slice & dice all ingredients into bite sized, or smaller, pieces.



Ingredients
  • 6 soft or hard tortilla shells
  • 1/2 large cooking onion
  • 2 cloves of garlic
  • 1 whole green pepper
  • 2 baby zuchinnis
  • Jalapenos (if you like it spicay!)
  • 1 cup of shredded carrots
  • 1 large tomato 
  • Cheese (feta, cheddar or goat)
  • 1 tsp cumin 
  • 1 tsp salt & pepper
  • Cilantro & green onion

Fixin's:
  • Salsa
  • Sour cream
  • Guacamole
  • Nacho chips (if you like a side crunch)



Directions
The Filling:
  1. Heat 1 tbsp of olive oil in a pan.
  2. Add onion until clear & slightly brown.
  3. Add zuchinni, green onion, carrots, jalapenos & garlic.
  4. Add cumin, salt & pepper.
  5. Heat while stirring for 5 mins, or until the the veggies look like the texture you want.
  6. Add the tomatoes at the very end and stir for 2 mins until everything is nice and warm.


The Toppers:
  • Cheese
  • Cilantro & green onions
  • Salsa
  • Guacamole
  • Sour cream

Healthy Chocolate Pudding

Now you can have your pudding and eat it too! This pudding is all kinds of nutritious and delicious! Teck Fitness's favorite kind of recipe :)


It is full of antioxidants, monounsaturated fat, potassium & protein. I actually really enjoy this pudding as my post-workout reward :) Just get your blender or magic bullet and blend the following together! I also like to add a banana if I'm looking for a snack replacement! 

I'd like to give straight credit to my lovely neighbor/friend Chantal for this recipe!

Ingredients:
  • 1 ripe avocado
  • 4 ounces bittersweet chocolate (as high in cocoa as possible)
  • 1/4 cup thick coconut milk (from the top of the can)
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons agave syrup or maple syrup or honey
  • 1 pinch sea salt

A Fresh Look at Salads

A simple ingredient like parsley, cilantro or root veggies can completely change the taste of your salad. I was looking for something that made my breathe smell fresh, my tummy full all with a little crunch. So I created this little number. Try it out!




Ingredients:

  • Mixed greens
  • Red peppers
  • Cucumbers
  • Avocado
  • Radishes
  • Sunflower seeds
  • Feta
  • Parsley
  • Cilantro
  • Topped with balsamic vinegar reduction & olive oil
Directions:

You really need directions on how to throw a salad together? Wow, you may need more help than I am able to give you... Ha ha.

In a nutshell, you always want to place the salad greens at the base, layer the other veggies (ensure they're in bite size pieces) and throw the nuts, cheese, herbs on the top and drizzle the dressing as a finish. My new favorite way of dressing my salad is with a mister!  And Enjoy!

Skinny Him, Fat Her

Why can men eat whatever they want and never gain a pound? And women just look at ice cream and gain 10 pounds? It's just not fair! I have investigated this annoying truth that has been staring me in the face ever since I moved in with my boyfriend 3 years ago.

I took some time and pin-pointed the main reasons for this so you can lay off of your boyfriends/husbands/buddies about what and how much they eat!

1. Men's organs and muscles are larger than women's

Larger organs and muscles means their metabolic rate is faster. Thus, they burn more calories and therefore need more calories than women! This also makes exercise seem harder for women compared to men because men have larger lungs than women so their tolerance for exercise is higher than women's. I know, I refuse to accept this as well.

2. Women are built to store fat

Yep... I know, super annoying. We're stuck with that stupid hormone estrogen, you know that hormone that makes us go crazy every month?! Ha, well another 'beautiful' part of that hormone is that it keeps fat on us in preparation for pregnancy.

3. Men are able to lose weight quicker than women

How? Well... if women change their diet and minimize the amount of calories they're taking in, their bodies go into starvation mode. Why? Once again, because women's bodies hold onto fat in preparation for pregnancy!

So there ya have it ladies, 3 reasons that have scientific proof. You just have to accept it, even though it SUCKS!
